When I pull down the Object menu, there is no option for Meeting available. I know for sure that I created the Meeting object in Lab 2a, so I'm not sure what the issue is.

Sorry you're stuck but there's almost always a pretty easy fix! Do NOT try to start all over again, eg. uninstall Max's Pitch Package, etc. That can make things worse.

If you defintely have a Meeting object but it's not showing up here to make a tab for, then you must have already created the tab for Meeting somehow. Not sure how. If you go to the Marketing app, do you see a Meetings tab?
