I need to fix my past Pitch ID but I need the instructions on how to do that so I can fix the unmapped section so I can move on.

Sorry you're stuck but there's almost always a pretty easy fix! Do NOT try to start all over again, eg. uninstall Max's Pitch Package, etc. That can make things worse.

Ok, so either you didn't add the Enthusiasm field to your Meeting object at all (Step 86) or you misspelled it - it has to match exactly. Go back to Setup > Object Manager > Fields & Relationships and see if it's there. If it is, fix any typo. If it's not there add it using Step 86.
If it's there and spelled correctly, then when you created it you may have clicked through the Next, Next, etc too quickly and ghat leads to the Visibility of the field not being turned on, Even though you can see it's there, it's technically "hidden" and unusable by you. To unhide it, go to Setup > Object Manager > Meeting and click on Fields & Relationships and click on the field name (NOT on Edit). Then click Set Field-Level Security (upper center of the page). Then click the checkbox next to the column-header Visible. That will turn on the field’s visibility for all user types listed below, including yours (Sys Admin). Then click Save. Now you can import and the field won't be unmapped anymore.
